If i am riding a bike or driving a car and i have something to give someone, i can hand them that item without getting off the bike or geting out the car. there are time, yes i understand that point of getting off or getting out. these are just mission and the running around like the cartographer occupation, i just stay on mount and keep running around collecting the items and easly turn them in.
