That's all up to you, you can perfectly become a great player without Craft or Harvest, altho, eventually it could come in handy if you lvl those as well

but you can choose all that for yourself, and lvl whatever you like

There are multiple answers to this question I believe. They are definitely important, but that doesn't necessarily mean that every character needs to be a max level harvester and crafter. For example, if you were in a guild that has dedicated harvesters and crafters, it may not be necessary for you to spend time on those skills unless you just want to level them up. It may even be seen as redundant in some guilds. However, if you are a soloist, you may decide that you want a character that can harvest and craft so you can be self sufficient. This way you can save money by making your own equipment and not buying it, or you can make equipment and sell it for dappers. Then there are some guilds that may encourage you to do whatever you enjoy with your characters regardless of the guild makeup. If you enjoy crafting in MMOs, then take up harvesting and crafting, or just one or the other if you are in a guild and have dedicated harvesters to supply you with materials or dedicated crafters that you can feed materials to. So you have to ask yourself a few questions first, then make the decision.

For making money, you will want to craft (and sell to the merchant), which involves digging if you want to maximize your cash flow.

Most guilds can provide most of what you need, and if not, there are master crafters in the game who can. What most people will need, though, are the mats. It is definitely recommended to master at least one above-ground region, and then the Prime Roots, to help your guild (or just yourself) with supplying mats. And since you would be digging anyway, you might as well craft something.

Or just digging the mats to sell will be quite lucrative.

If you don't like digging then you should not do it.
I have several melee and magic masters but i can't even craft a decent pair of boots for myself, and picking up some amber from the ground hurts my back.
This game is perfectly playable for ppl who don't like to craft/digg/roll in the dirt/... , it all comes down to picking the right guild. I've been in a couple off guilds (i'm not a guild hopper but playing in a dead guild without digg/craft is pretty impossible) and in some I have felt left out because I lacked those 2 skills (leaving those guilds quickly) but I have been in guilds where lacking those 2 skills wasn't a problem at all. I've even been in strongly digg oriented guilds and have had lots of fun with muddy homins, they digging all evening while I sat at the stables getting them killed by chat or killing some wildlife myself.
It all comes down to finding the right homins in the right place and having fun.
